Sorry sorry for not blogging for so long.

Let’s just say between eating new year goodies and watching Kimi ni Todoke, blogging didn’t really seem like such an important issue.

Not much to say.

Chinese New Year this year has resulted in a nice haul. Shan’t give any details though.

Shall just leave you with what’s up in my life:

  • I LOVE JAPANESE LESSONS!
  • Taking part in MOF Budget Debate. Finals on 17th March
  • Taking part in SCMUN. Last day is 17th March. Now you see the clash
  • Have decided to take part in both and have double commitments which will probably kill me
  • Being spastic with Jeremy. Haha. A good combination with Chinese spelling
  • Watching Kimi ni Todoke. Namikawa Daisuke’s voice there is sooooooooooo good!
  • Have been trying to exercise a bit more. What’s with the Tabby-is-actually-putting-in-effort-to-exercise expressions?
  • Spazzing with Bella. *Waves to Bella*
  • Common tests in 2 days time.
  • Listening to BIG BANG. Love their albums!

That’s basically it.

Chocolate Cookie Cheesecake

“I don’t know what to say about this recipe other then it is decadent and addictive.”

Ingredients

  • 2 cups chocolate sandwich cookie crumbs
  • 2 tablespoons butter, melted
  • 1/4 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 2 pounds cream cheese, softened
  • 1 1/4 cups white sugar
  • 1/3 cup heavy whipping cream
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 4 eggs
  • 1 1/2 cups chocolate sandwich cookie crumbs
  • 16 ounces sour cream
  • 1/4 cup white sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 1/2 cups semisweet chocolate chips
  • 1 teaspoon vanilla extract

Directions

  1. Combine 2 cups cookie crumbs, melted butter, brown sugar, and cinnamon in a medium bowl; firmly press mixture evenly onto bottom and 1 inch up sides of a 10-inch springform pan. Bake at 350 degrees F (175 degrees C) for 5 minutes; set aside.
  2. In a large bowl, beat cream cheese until smooth. Gradually mix in 1 1/4 cups sugar, 1/3 cup whipping cream, flour, and 1 teaspoon vanilla. Beat in eggs, one at a time, beating after each addition. Pour 1/3 of batter into prepared pan. Top with 1 1/2 cups cookie pieces; pour in remaining batter.
  3. Bake at 350 degrees F (175 degrees C) for 45 minutes. Remove cake from oven. Combine sour cream, 1/4 cup sugar, and 1 teaspoon vanilla; spread evenly on cheesecake. Continue baking for 7 minutes. Turn oven off and leave in oven 30 minutes. Remove cheesecake, and let cool completely on a wire rack.
  4. Combine 1 cup whipping cream and chocolate chips in a saucepan; stir over low heat until chocolate melts, and then stir in 1 teaspoon vanilla. Pour mixture over cheesecake while still warm. Refrigerate until serving time. Should be at least 8 hours for refrigerator time, remove about 1/2 hour to 1 hour before serving, remove ring from springform pan, decorate to choice and get out your fork!

Fudge Puddles

Fudge Puddles Recipe

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup white sugar
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup milk chocolate chips
  • 1 cup semi-sweet chocolate chips
  • 1 (14 ounce) can sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 3/4 cup pecan halves

Directions

  1. Preheat oven to 325 degrees F (165 degrees C).
  2. Sift together flour, baking soda and salt.
  3. Cream butter, peanut butter and white and brown sugars. Mix in egg and 1/2 teaspoon vanilla. Stir the flour mixture into creamed mixture. Shape the dough into 48 balls, 1 inch each. Place each ball in one compartment of a mini muffin tin.
  4. For filling, put chocolate chips in a double boiler over simmering water. Stir in milk and vanilla, mix well.
  5. Bake for 14 to 16 minutes or until lightly browned. Remove from oven and immediately make wells in the center of each using a melon baller. Cool in pan for 5 minutes. Then carefully remove to wire racks. Using a measuring cup fill each shell with the chocolate mixture. Top with a pecan half.

Japan Trip Journal 1

On 12th of Nov (come to think of it, that’s almost a month ago), I WENT TO JAPAN!!!

We first went to Huis Ten Bosch (pronounced house-ten-bosh), which is a themepark of sorts. IIt recreates a town from the Netherlands. We went there to learn about their efforts to reduce water and energy usage and in this way, help the environment. It’s a beautiful place, with windmills all around and we even went on a cruise in the river that runs through it.

In Huis Ten Bosch, we also visited this garden. It was so amazing. Imagine all those gardens you see in movies, the kinds with the mazes and fountains, it’s almost like that. Pity that I still didn’t know how to properly use my camera, so I couldn’t get quite a lot of pictures to look right…

Day 2 was the day of the school visit. I was made to present a speech on behalf of MGS, in both English and Japanese. Figures why they chose me. I had to stay up practising all night because I just couldn’t get the name of the school right. (Isahaya Commercial High School = Isahaya Shougyou Koukou, quite a mouthful)

Then we went to learn about what happens to rubbish in Japan. The plant that we went to deals only with combustible garbage.

Then we went to visit Nagasaki Peace Park, where the famous Peace statue resides. The actions that each of its limbs are doing has a special meaning, though I can’t really remember what now.

Active Time: 15 minutes
Total Time: 50 minutes
Yield: 48 brownies

INGREDIENTS

    Brownie Cups
    2 sticks (1 cup) butter
    11⁄2 cups bittersweet chocolate chips
    1 cup sugar
    4 large eggs
    1 tsp vanilla extract
    1 cup all-purpose flour
    Ganache
    1⁄2 cup heavy cream
    1 cup bittersweet chocolate chips
    Pink pearl dragées (optional)

PREPARATION

1. Heat oven to 350ºF. Line mini–muffin pans with paper liners.

2. Brownie Cups: Melt butter in a medium saucepan over medium-low heat. Add chocolate chips; stir until melted and smooth. Remove pan from heat. Briskly stir in sugar, eggs and vanilla. Stir in flour until blended. Fill each baking cup with a slightly rounded Tbsp batter.

3. Bake 15 minutes or until wooden pick inserted in center comes out clean. Let cool in pan on wire rack 10 minutes before removing from pan to rack. Cool completely.

4. Ganache: Place heavy cream in medium glass bowl. Microwave 1 minute on high until it begins to simmer. Add bittersweet chocolate chips; let stand 1 to 2 minutes. Whisk until smooth. Spread a tsp on top of each brownie bite; decorate top with dragées if using. Let set at room temperature.

Tip: These may be baked and topped with ganache a day before. Store in an airtight container in refrigerator. Serve at room temperature.

Fun after exam things~~~

I come with pictures!

So after the exams, a lot of things were planned.

There was the class party which Hui Xian very graciously offered her condo’s club room as the venue. It was a costume party, so we all decked up in our various costumes and head over to the club room. I remember that there was this small boy who was swimming in the pool enxt to the club room and then he was staring  at the weird people who seems very very out of place. Haha…. He must have been staring at Nicole the most though…. XD

We played charades and mass twister and talentime, videos of which can be found on facebook, I’m told. :)

Yesterday, the Bible-Study group came over to our place to play Guitar Hero World Tour. Moses wasn’t there due to him having something else on. Reuben and Randall went off early too. And Gary…. well…… didn’t come too. Marcus didn’t even come for BS and Irwin….. went of as well. Ah well. So that effectively leaves Odelia, Grace, Kester, Jia En and myself plus Kor and Zhu.

EOYS are over!!!

Like the title says, my end-of-year exams are over!

To be honest, they’ve been over for quite awhile but I just never really got to blogging.

I did well. Straight “A”s kind of well. (Except that I got a C for PE…..)

Plenty of things are going on for me.

There was the May Oh Challenge Shield which is a intra-club debate competition whose finals are showcased to the whole school.

The topic was really fun to me – THW only allow beauty contestants with an A1 for the O levels English Examination to participate in a Singapore Beauty Contest. We were the Opposition.

Well, long story shot, giving us three days to prepare isn’t exactly enough. But our side won the case and I got best speaker.

Then I got invited to join the team (again) twice this time. I honestly have no intention of joining. It seems a little late to join now…. Yes, I understand that perhaps the team may be stronger if I were to join and that Min would have an easier time as well. But it’s Secondary 4 next year and as much as I know I have to study hard, I do still want a life.

Ahhh…… I’ll pray about it and please pray for me too.

I’ll be presenting a project during the Bishan Japanese Cultural Festival on 27th Oct. If you are free (and if you take Japanese) please do come and watch. :)

Then there’s the Amber Initiative, which is a Human-Trafficking Conference of sorts.

Then there’s ROCs.

Then there’s the Australia family trip, which El and Teacher Carol will be tagging along for.

The Bible-study group came over today. It was fun. We played Guitar Hero World Tour.  But the picnic idea failed sadly. Went with Jia En and Kester to watch Cloudy with a chance of Meatballs. Jia En cried. XD (She’ll kill me for that)

AFA (Anime Festival Asia, I think….) is on the 21st and 22nd of November. If anyone is interested in going with me or cosplaying (perhaps with me) please do inform me. I’ll be more than happy to tag along. XD

Oh, and Tokyo DOGS 1st episode subbed is out on dramacrazy.net starring MIZUSHIMA HIRO!!!!!!!!

And Amalfi is showing in cinemas starring Yuki Amami and Touda Erika!!!

Candied Apples

How to Make Candied Apples

Love the candied apples you get at the fair? Then check out this recipe from the Washington Apple Commission for making this perfect for fall treat.

Makes 8.

2 cups light corn syrup
1 cup sugar
1/2 cup cinnamon red hot candies
8 medium Red Delicious apples on skewers
Chopped nuts (optional)

1. Combine corn syrup, sugar and red hot candies in saucepan; bring to boil over medium high heat, stirring constantly. Cook, covered, about 3 minutes to allow steam to dissolve crystals that may have formed on sides of pan.

2. Uncover and cook without stirring to soft crack stage, 290° F on candy thermometer or until syrup dropped in very cold water separates into threads that are hard but not brittle. Cool 2 minutes.

3. Dip apples into mixture to coat surface then roll in nuts if desired. Place on aluminum foil squares to cool.
